We only use Certified Organic maple syrup from Hoover's maple farm near Listowel,ON.

Organic Maple Syrup?

Why does Certified Organic production matter? All sap is 'organic' when it comes out of the tree, but it is what is done in the processing that matters. A lot of syrup producers use harsh chemicals and acids to clean their processing equipment. Organic producers do not use any chemicals. They also have stricter guidelines for tapping the trees, with a maximum of 3 taps per tree (according to the size of the tree). And they only use certified organic safflower oil as a defoamer in the boiling process.
