Organic agriculture is a holistic approach to production which promotes and enhances biodiversity, protects long-term soil health and respects ecological balance through the use of environmentally and ecologically sustainable practices. While it often draws on agriculture practices from the past, we believe organic farmers are leading the way for the future of our food system. While we strive to use as many organic ingredients in our regular menus, the prices and difficulty finding good suppliers, sometimes make this impossible for us to offer our food at the low prices customers have come to expect. But we believe conventional food is too cheap (and comes with costs to our ecosystems, health and producers that we don't see and "pay for" in other ways) and that "organic" food bought more directly from producers, artisans and local value chains reflects the real price of food.

We are grateful for all the pioneers and leaders of this movement, who continue to show us that we can produce an abundance of beautiful, delicious food in ways that are good for us and our environment!

The Guelph Organic Conference, started in 1982, is a pioneer of the organic movement in Canada. The conference takes place at the University of Guelph January 28th- 31st.
